Managing Food Waste in Small Format Stores

The working group has learnt that food waste can be a function of the case size, sales per day and shelf life. Often decisions taken on case sizes, shelf life and assortment are biased towards optimising the large store format. In this session, we will explore how retailers manage these choices in order to reduce food waste in small format stores, often stores in urban locations, airports, etc, where deliveries are less frequent and the opportunities to donate to charities are more limited
