Managing Food Waste in Online Grocery

Whether it is harder to manage food waste in the online grocery fulfilment centre or dark store or not was the question that got us all very engaged in this peer to peer discussion. Starting with a presentation from Nemlig on how they manage demand to minimise food waste, the group learnt about their smart markdown process that has helped increase the lost profits from marking down too aggressively, and at the same time minimised the food that needs to be spoiled. They have also improved productivity with the planners by 77%. The conversation broadened into alternative and current approaches to managing food surplus in these locations.
