Sophisticated automated replenishment systems are designed to balance sales, waste and availability however, in the pandemic, shopping habits have undergone significant changes, higher than Christmas volumes, different product mixes, a smoothing out of the week, less evening traffic and fewer but bigger baskets. This discussion, kicked off with a review from Chris on the impact and the consequences for food waste that has emerged from the crisis, and the potential implications for how we manage the inevitable shocks of the future.
